Sewing corners

I am sewing an ice fishing shelter that consists of a flat roof and four sides with a door in one end. It all fits over a wooden frame. How do I sew the corners so that I don't have so much material where the 2 sides and roof join? I have been just folding the material over and making one zigzag and one straight stitch for seams but where it gets three dimensional I will have six layers to sew through and my machine is not that big. Is there an easy way to cut some of the fabric out and still have a nice finish?

I would really have to see these project first but maybe if you cut away the excess fabric.
The only other way is go to an upholstery shop or somewhere where they have an industrial sewing machine that will sew this easily.
